In The Two Towers:
Oliphaunts are sighted by Frodo and Sam when the Haradrim that are bringing them to join Sauron in Mordor are ambushed by a Gondorian patrol led by Faramir.
In The Return of the King:
The Oliphaunts are brought to battle by the Haradrim at the Battle of Pelennor Fields where they trample the Rohirrim before a counterstrategy is found by the Rohirrim. Legolas is able to bring one down singlehandedly and then the King of the Dead and his army finish the rest of them off.
